This will make one loaf in a 9 x 5 loaf pan or 3 mini loaves in 6 x 3 loaf pans. Baking time is included for both. To save time I weigh out the amount of bananas for one loaf, vacuum-seal and freeze. I then weigh and combine the first set of dry items and store in air-tight container. I do the same with the sugars. I also freeze the buttermilk I haven't used measured out for one loaf.
Tip: Freeze leftover buttermilk to use later. You can also seal and freeze ripe bananas!
Ingredients
240g all purpose Flour
5g baking powder
5g baking soda
3g salt
3g cinnamon
60g chopped pecans
(These will be set aside after combined in a small bowl.)
1 stick of real butter (room temperature)
105g white sugar
105g brown sugar
(These will be combined in a large bowl.)
2 eggs beaten
5g Vanilla
120g buttermilk
(These will be added to the large bow.)
375g mushed bananas
(This will be added to large bowl.)
1-2 tablespoons of butter for brushing bread when done.
Steps
1. Combine the flour, salt, baking powder, baking soda and cinnamon and set aside.
2. Mush bananas if not already mushed and set aside. I use my hands.
3. Combine the white sugar, brown sugar and the butter. I use my hand.
4. Beat the two eggs and mix in the vanilla. Add to the sugar mixture.
5. Add the buttermilk to the sugar mixture and mix well. I use my hand.
6. Add the mixture to the bananas.
7. Mix in the pecans.
8. Add the dry ingredients set aside to the mixture. Stir only until the white of the flour is no longer visible. DO NOT OVER MIX.
9. Add to a greased and floured loaf pan or a pan sprayed with oil spray. I have also forgotten to do this step and everything was fine. I just had to help a bit.
10. Bake at 350 for 1 hour and 10 minutes on middle rack. Check at an hour with a toothpick. If it comes out clean, it is done.
Mini loaves: Bake for 55 minutes and check at 45 minutes.

11. Brush with some butter, and cool for 5 minutes and remove from pan.

ReplyDeleteI have been making all the recipes that Mrs. Madigan has posted by far this is my favorite so far. It yield 23 mini loaves. Next one I am trying is the sauce I know it will be so good too.
