Calzones
These are quick, easy and delicious!
Ingredients:
360g bread flour
13g sugar
10g instant yeast
6g table salt
230 g water
10G olive oil (I use whatever oil I have if I don't have olive oil)
Extra oil in prep bowl about 1/2 cup
Preferred fillings
Directions:
In your stand mixer, add dry ingredients (bread flour, sugar, yeast and salt and mix.
Heat water to 110 - 115 degrees.
Add oil and water to dry ingredients and stir. Scrape what sticks to spatula back into bowl.
Attach dough hook to you stand mixer and set for 7 minutes on 3 speed and start.
I scrape the sides when needed. The bowl should be left with very little stuck to it.
Warm your oven to 200 degrees for 2 minutes and then turn it off. (This is going to be for dough to rise).
Prepare a large bowl by pouring a small amount of oil into it. (It doesn't have to be any exact amount but it's about a spoonful.)
Once your dough is ready (should pull from dough hook easily), remove the dough and place in the bowl and roll the down in the oil to coat it and rub the coated oil along the sides of the bowl. (This will help keep the dough from sticking.)
Cover bowl and place in warm oven. Oven should be OFF.
Prepare pans by spaying with oil. (These are 8 pizza pans.)
Remove dough after it doubles in size. (about 35 to 45 minutes)
Weigh the dough and divide by 4.
Make dough balls.
Place dough balls one each on baking pans.
Put oil on your hands and tab the dough to lightly coat. (This will keep it from drying out.
Cover with clean towel or plastic wrap and let rest for 10 minutes.
Preheat oven to 475 degrees.
Take one pan out under cover.
Press down on dough to start spreading the dough across pan. Press and pull to the sides. press in the center to continues distributing the dough evenly across the pan. Turn the pan as you spread to the edges.
Place your favorite fillings: pepperoni, ham, mushrooms, ricotta...whatever! Make sure to put fillings off to one side and not too close to the edge so you have room to fold and seal.
Carefully fold the dough in half over the fillings
Press the edges to seal.
Fold the edge over and press again. Use a fork to press the edges for "extra" seal.
Optional: Place a piece of filling as a marker to identify calzones.
Place in oven for 10 minutes or until golden brown.
Take out of oven and let cool for at least 10 minutes. VERY HOT.
Dip in marinara sauce and enjoy!!
