Cookie Dough
5 lb bag of all purpose flour
48 oz can of vegetable shortening
2 cups (400g) sugar
2 1/2 tbsp (20g) ground cinnamon
3 oz (85g) tequila
5 oz (148g) water
*makes about 420 cookies
Coating
1 tsp ground cinnamon
1/2 cup sugar
In a large bowl, combine sugar, cinnamon, tequila and water then completely mix into shortening
Mix in the flour a cup at a time making sure to mix in well (This is the hardest part!)
Weigh 10g of dough for each cookie. (This will give you around 420 cookies.) You can absolutely make the cookies bigger but this amount makes them easy to handle and eat... yummm!
Roll dough for each cookie into a ball and then flatten onto cookie sheet and place at least 1/2 an inch apart. Cookies should measure a little over 1 inch in diameter. You can definitely choose a different shape if you wish.
Preheat oven to 350 degrees and when ready bake cookies for 25 - 30 minutes or until golden brown. (Cookies will expand by about 1/2 an inch.)
Mix the coating ingredients in a shallow pan.
Remove cookies from oven and coat then in the mixture.
Let cool. They can be eaten right away but the flavor is best when left to sit for a day or two.
